This is a delicious recipe for Irish Soda Bread I found HERE.
I added some caraway seeds, but you don't have to, the bread is wonderful either way. We had some for dessert after our traditional St. Patrick's Day dinner and some with breakfast the next morning. Mmmmm...
Irish Soda Bread
- 2 eggs
- 2/3 cups sugar
- 3 Tablespoons vegetable oil
- 3 cups flour
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cup buttermilk
- 1 1/2 cup golden raisins or dark raisins (or both)
- 1 Tablespoon caraway seeds (optional)
- Place eggs in a mixing bowl and using an electric mixer, beat well.
- Add sugar and oil and mix until combined.
- In a separate bowl, combine flour, baking powder, baking soda and salt. Add this mixture to the egg and sugar mixture and mix.
- Add buttermilk and mix well.
- Add raisins and stir gently.
- Pour dough into a greased loaf pan.
- Bake for 1 hour at 350 degrees F or until a inserted toothpick comes out clean.
